Black currants (ribes nigrum) are tart, berry-like fruit
that contain high concentrations of anti-oxidants and phyto enzymes.
Known in Europe and Russia as "cassis", black currants are used in jams, jellies, sauces, beverages, desserts, are dried, used fresh, and also as a flavoring in vodka.
The liqueur is added to champagne to make "kir", a tasty and flavorful cocktail.
 
Cultivation of the plant was banned in the US in the early 1900's
because it was believed to harbor insects which transmitted white pine blister rust,
a direct threat to the logging industry. By the 1960's, scientists had developed
rust resistant varieties, and the ban was lifted in certain areas of the country.
 Dragonfly Farms is the only commercial grower
in the southernmost mid-Atlantic region.
